
Grapefruit Sour
50ml Matugga Golden Rum
35ml Grapefruit juice
Gomme (sugar syrup)
25ml Aqua faba (chick pea water as an egg substitute)
1 fresh lemon

1 fresh lemon
Add the Matugga Golden, grapefruit juice, aqua faba and 1 squeezed fresh lemon to a cocktail shaker.
“Dry shake” vigorously (without ice) to create a foam for 30 seconds.
Add ice and gentle shake to chill.
Double strain into a coupe glass and garnish with a grapefruit peel twist.
